Chocolate Roulade

So delicious!

This is one of the yummiest diet foods I have ever eaten… Ever since I joined Slimming World I’ve seen people talk about the half syn fruit roulade, but having tried using Quark (a non-fat soft cheese found in most supermarkets) in various other cake recipes, I thought that this one was destined to fail also. But apparently not!

The original version of this recipe has a tsp of baking powder, which accounts for the one syn. However, I removed this and added 1.5 syns worth of cocoa powder and 4 syns of nutella. So 5.5 syns for this WHOLE CAKE! And it tastes very chocolatey, so a very low syn chocolate fix. My mum who doesn’t do Slimming World thinks it tastes good too – so perfect for slimmers and non-slimmers!

Ingredients:

  • 4 eggs, separated
  • 4-6tbsp granulated sweetener (to taste)
  • 1 250g tub of Quark
  • 3 level tsp cocoa powder
  • 1tbsp nutella
  • Strawberries
  • Frylight

Method:

  1. Preheat the oven to around 175 degrees Celsius and line and spray a swiss roll tin.
  2. Whisk half the quark with the yolks, sweetener and cocoa powder.
  3. Whisk the egg whites until stiff.
  4. Whisk half the egg whites into the yolk/quark mix, then fold in the rest.
  5. Spread evenly into the swiss roll tin and bake for 15-20 minutes.
  6. Thickly slice some strawberries.
  7. Mix the rest of the quark with the tbsp of nutella.
  8. When cake is done, leave to cool for 5 minutes, then tip out onto a cooling rack or other place.
  9. Spread with all of the quark/nutella mix and layer on the strawberries.
  10. Using your hands, roll the roulade and place on a serving platter or plate.
  11. Sprinkle with a bit of sweetener (or icing sugar for 1syn per tsp) and serve!
